El precio de la carne registra aumentos de hasta el 35%
Pasaron varios meses en los que el costo de la carne sea noticia. Su precio estaba rezagado ante los aumentos inflacionarios. Ahora se registraron alzas de hasta un 30% en los valores de la hacienda en pie, que se comercializan en el Mercado de Cañuelas y en otras ferias del país.
El aumento se trasladó a las carnicerías, donde hoy hubo subas de entre el 10% y el 35%, dependiendo de la zona y el proveedor.
Por lo general los precios de la hacienda y la carne tienen un aumento visible un poco antes de las fiestas de fin de año; en 2022 eso no se concretó; lo que produjo el atraso de los valores nominales en medio de una inflación de casi 95% anual, la más alta en más de tres décadas.
La carne venía retrasada respecto de la inflación en 2022. Según el Indec, la inflación general del año fue del 94,8%, mientras que el asado pasó de $884,61 en diciembre de 2021 a $1241,67 en diciembre 2022, es decir, una suba del 40,3%.
Especialistas del sector ganadero explicaron que el rezago contra la inflación es un efecto de la sequía: los productores necesitaron sacar a los animales de sus campos y se generó una sobreoferta.
