Recuperarnos en poco tiempo es imposible
El Presidente de la Unión Hotelera Gastronómica de Tucumán, Ernesto Gettar, visitó nuestros estudios de Café Prensa para hablar sobre la situación del sector ante las restricciones.
«Un negocio como el nuestro está pensando en las dimensiones que tiene y lo organizas en base a eso. Los costos fijos son altísimos, porque vendemos servicios. La mano de obra es un costo muy alto y tiene un gran impacto en las ventas. Y no te digo nada cuando cerramos por varios días los establecimientos. Recuperarnos ahora en poco tiempo es imposible, todavía estamos muy lejos de estar en un punto de equilibrio en las empresas» dijo.
“El tipo de contratación de energía en un hotel es una categoría muy alta. Vos contratas potencia, una determinada cantidad. Todavía no compre la energía, esa potencia no tiene que ver con el consumo. La potencia cuesta 900 pesos más IVA por kilo. Multiplícalo por los kilos que quieras comprar y vas tener el costo básico y después multiplícalo por el 47% de los impuestos que tiene, y a esto se suma la energía. Y recién se conforma la factura
«La provincia saco una ley a través de la legislatura que se cobraba la potencia que se consumía, pero eso se ha agotado en diciembre. Nos sugirieron como alternativa bajar la potencia que se puede hacer una vez al año. Hace 5 meses que no nos acompañan con esta medida. Eso en cuanto a la energía y lo mismo pasa con otros servicios. Los negocios están pensados para trabajar. No podemos legislar sobre no trabajar.» Agregó.
Cuando se le pregunto si el sector recibió algún apoyo del estado, a lo que manifestó «Con lo único que se apoyo fue con los ATP y los REPRO, a nivel nacional, después veremos qué pasa. Por lo pronto esa es la única ayuda.
A nivel provincial, si bien es cierto que nos dio una ventaja con la alícuota cero en los ingresos brutos, a los efectos de un negocio cerrado no tiene ningún impacto. Porque eso lo pagas con facturación, y si tenes un negocio cerrado, no hay facturación».
En cuanto a las disposiciones provinciales, que surgieron a última hora, en base al decreto nacional, dijo «Sin duda hay una gran confusión, porque se debería haber tomado medidas con más anticipación. Si a las 10 u 11 de la noche te dicen que no podés abrir, vos ya compraste toda la mercadería que, si no se usa, la tenes que tirar. Por eso seguramente va a haber muchas transgresiones.
Estos parates en pérdidas son monstruosas porque el impacto en nuestros costos fijos y en la planilla salarial son altísimos. Pensando que venís con situación de deuda muy grande.»
Se le consultó sobre la posición respecto a esto, a lo que respondió «La cámara siempre llama a cumplir con la ley. Después cada uno toma sus riesgos y sus determinaciones. Las transgresiones serán decisiones individuales»
En la segunda parte de la entrevista se le consulto por las recientes actividades de la institución «Estamos dictando capacitaciones y haciendo convenios con los municipios del interior. Los temas los sacamos en base a lo que la gente necesita para armar su negocio. Tuvimos una capacitación sobre celiaquía en Tafí Viejo” dijo
“Es muy importante el interior, el desarrollo. La cantidad vendrá de la mano del desarrollo. Es muy importante poner los ojos en el interior. El turismo es un desarrollador de zona que da trabajo a la gente del lugar.
Estuvimos en una reunión en Tafí Viejo donde el intendente con empresarios gastronómicos, presentaron un proyecto de revalorización de la zona, un embellecimiento muy importante donde se da mucha importancia a la parte gastronómica” agregó.
También destaco sobre el sector gastronómico «Muy pocos han podido invertir, es un feedback entre los gobiernos y la parte privada. Tiene que acompañar también el sector público. Tenemos que tener caminos que nos conduzca hacia el interior. En los municipios tiene que haber desarrollo, como en el caso de Tafí Viejo.
Fuera de esto, dentro de la Unión de Hoteleros Gastronómico, pensamos ahondar en capacitación, sobre todo en la parte del empresario, porque comprenderá mejor la capacitación de su personal.»
